What is SCOBY?

S.C.O.B.Y. (symbiotic colony of bacteria and yeast) aka mother, is used to refer to mixed cultures of bacteria and yeast present during production of kombucha. It’s the living home for bacteria and yeast that transforms tea into tangy, fizzy kombucha. Think of the SCOBY as the coral reef of the bacteria and yeast world.

When is Bootleg Bucha open?

Bootleg Bucha is open on Wednesday from 10am – 7pm, Thursday & Friday from 11am – 7pm, Saturday from 10am-3pm & Sunday from 11am – 2pm at Horsefeathers (or by appointment). As a startup small business, we are excited to say that we have been selling out each week. We have expanded our production already and plan to expand even more before the end of the year.

Is there alcohol in kombucha?

Yes, there is a slight amount of alcohol in kombucha. Currently, we test each batch to verify that our product is under 0.5%. It’s about the same as a NA beer.

Is there caffeine in kombucha?

Yes, there is slight amount of caffeine. The base of our kombucha is three teas. During the fermentation process, the SCOBY feeds off of the caffeine and reduces the level in your glass. Ultimately, we end up with less than 50% caffeine than the same amount of hot or cold tea.

Should I buy some bootleg bucha?

Does it snow in Buffalo? Of course it does and of course you should!
