S.C.O.B.Y. (symbiotic colony of bacteria and yeast) aka mother, is used to refer to mixed cultures of bacteria and yeast present during production of kombucha. It’s the living home for bacteria and yeast that transforms tea into tangy, fizzy kombucha. Think of the SCOBY as the coral reef of the bacteria and yeast world.
